Sausage & Peppers

What you will need...
lg pot
lg frying pan
2tbs of olive oil
1package of sweet or mild sausages (I use Hillshire Farm usually comes 6 in a package)
1regular size jar of Prego Tradtional Spaghetti Sauce (Do not substitute)
1 lg green pepper
1 lg yellow pepper
1 lg red pepper
1lg yellow onion
crushed basil, pepper and garlic salt for seasoning.

To Do...
Cut up all your veggies and toss them into pot,
pour your sauce in and add roughly 2 tsp of basil, place on medium heat sitrring every so often. cover with lid.
Cut sausages in 1/2's
with your frying pan pour the olive oil in and heat it. Put your sausage in, season with garlic salt and pepper to taste and darkly brown each side.
Once browned place in pot with veggies.
Stir well.
Put heat on lowest setting.
Keep covered.
stir every 30-45 minutes.
Cook roughly 4-8 hours.
If your in a rish you can cook quicker on higher setting or cooking sausage prior to putting in pot. However the sausage really seasons the sauce so I reccomend for best tasting results to let it cook for quite a while.
Sauce will appear thick at first but will thin as it cooks.
Server with angel hair pasta and a salad.
Its delicious!!

Chicken & Cream Chesse Dinner! Delish!!!!

What you will need.

13/9 Glass Dish

4- 1/2 chicken breasts ***fileted*** (so you end up with 8 peices) you can ask the butcher to do this and when your comfortable its super easy to do with a SHARP Knife.

1 regular-large size tub of cream cheese (depending on yourdesired amount).

a small batch of green onions.

12 peices of bacon.

PreHeat your oven to 350*

In a regular size bowl (microwave safe) put in all your cream cheese and microwave for no more than 45 seconds. (this is just to get the CCheese to be soft and workable) Take out and..
Dice up the green onion and add all to cheese.. Mix well.

Take a fileted chicken half breast and turn it upside down (so the inside part if facing you) spread about 1-3 tbs depending on your desired amount of cheese inside (I do 2-3 tbs)

Roll it up! Wrap with a peice of bacon and stick a toothpick in to hold it secure... Some cheese will fall out. Thats OK! It doesnt need to be perfect! Place chicken in glass dish 
Repeat until all breasts are done. All side my side in the dish.. Add remaining cheese into the open spots of the dish (makes for a good topping sauce!) Place remaining 4 peices of bacon over the top of the breasts.
Place in oven for 60min

Serve with
Baked or Mashed potatoes
green beans or veggie of your choice!!!
Serves 6-8

This is my husbands 3rd favortie dinner choice! His first is the Steak I make and the second are my Tacos!!!

WHAT'S FOR DINNER TONIGHT... **ENJOY**

Enchilada Casserole
Prep and cook time about 45 minutes.Serves4-6
Preheat Oven to 350*
WHAT YOU WILL NEED

13/9 baking dish [I use glass].Lg. frying pan.
1) 2 lbs of Ground Beef.
2) 16 oz. bag of shredded cheese [ I use Mexican Style] which is a mix of cheddar and jack.
3) 1 can [19oz] of La Victoria Enchilada Sauce.
4) Small can of Black Olives
5) 1 box of Ortega Hard Taco Shells [12] !!DO NOT SUBSTITUTE!!
6) Some Green Onions.
7) 1 small white onion.
8) Sour Cream [for topping]

OPTIONAL ADDITIONS
1) ¼ Tsp. Cayenne Pepper
2) 4 oz. MILD Diced Green Chilies [La Victoria or Ortega]

TO DO
1) Dice up your olives, onion, and gr. onions. Set aside [separately]
2) Break apart all taco shells into med/lg bite sized pieces into baking dish [evenly spread about].
3) Take 8 oz [about half] your cheese, and spread evenly over broken taco shells. Set aside.
4) On medium heat cook ground beef, seasoned with garlic salt and pepper to taste. Half way through cooking add all of your WHITE onion, along with optional ingredients. Stir. Once meat is cooked thoroughly DRAIN WELL. Pour all meat into baking dish.
5) Pour whole can of Enchilada Sauce into meat. Mix well with spoon and make even across dish.
6) Evenly spread remaining cheese over top.
7) PLACE your black olives over casserole [to look neat]8) Sprinkle Gr. Onions over [to taste]
9) Place in oven for about 20 minutes, or until cheese is completely melted and heated thoroughly.

Serve with..
Top with Sour Cream.
Refried beans and Spanish rice

This is a dish better ate after cooking. It is ok for leftovers, but when making for someone, if cooked the night before will result in soggy taco shells!!!
